I'm working on some night quests and did the math to figure out when my kills would count.
The table below shows IRL times (in Central Standard Time, UTC -6) when the in-game clock reaches the specified times. Of course, this only applies to maps where the clock is running, so Factory and Labs are different.

Notes:
The in-game clock runs at 7x real time. Each in-game hour is approx. 8.5 minutes of real time.
Since there are two options for each map, IRL AM/PM is irrelevant. Just pick left/right server, whichever is the nighttime raid.
Your clock may be sync'd differently than mine. Recommend you give a minute or two of buffer on either side to be safe.
"Chumming" quest is now 23:00 – 10:00, so either left or right server will be valid the vast majority of the time.
