Looking at alot of the posts/comments using Dark Souls as an example and I gotta say. Valheim has always been similar to Dark Souls.
In Dark Souls as you progress you face an escalating progression of challenge (at least until a certain point when you become OP). As you face these challenges you always have the ability to go back and grind or level weapons to overcome that challenge. The degree to which you do so is up to the player. This is a built in difficulty slider in a way.
In Valheim, for all biomes except the Meadows you face a similar curve. Each biome is pretty yough for each tier of equipment, especially if you are underleveled. But as you overcome that and level up that challenge gets easier, til you progress to the next zone.
I think instead of immersion-breaking difficulty settings, the devs could add other ways to adjust the difficulty. Sekiro for example has a way for you to optionally raise the damage/hp of enemies, and rewards you more loot. Or can have an item that makes the parry window smaller (sort of like giving Kuro back his charm)
